Coconut Almond Cake

My cousin who lives in Campeche, Mexico gave me this recipe 20 years ago….not kidding. Β She is an amazing cook and baker! Β This is my first time making this recipe and oh why oh why did I wait this long to make it?! Β Who knows, but it is heavenly! Β I named it “Coconut Almond” cake, but you could call it “Coconut Pecan” cake since she used pecans and I used almonds.

Coconut Almond Cake

  • 5 Eggs
  • 1 cup of vegetable oil
  • 1 cup of sugar
  • 1 cup of Pancake mix
  • 4oz of shredded coconut
  • 4oz of pecans, almonds or walnuts
  • 1 can of condensed milk
  1. Mix eggs and vegetable oil until fluffy
  2. Add sugar and then pancake mix a little at a time
  3. Mix your coconut and pecans and add to the mixture
  4. Grease your cake pan with butter cooking spray
  5. Bake at 375 for 25-30 minutes
  6. Pour condensed milk as much or as little as desired on top of the cake
